The Police issued almost 400 tickets during the recent bicycle safety blitz. This included one charge for riding a bike with only one hand on the handlebars.

An online discussion at Citizens for Safe Cycling indicates that it may not even be illegal to ride with only one hand. Apparently, there is a city by-law which makes it illegal to ride while carrying something in one hand, but it's not clear if this means that both hands always have to be on the handlebars.
